3 Great Holiday Cookies

Holiday cookies make wonderful gifts or cookie baking can be a Holiday festivity that is fun for the whole family. Gather the kids and leave the diet at the door because below are three of the most popular and scrumptious Holiday cookie recipes of the year!

The Classic- Sugar Cookies

Time: 1 ½ Hours

Ingredients:

1 cup butter (softened)
1 1/2 cup sugar
2 teaspoon vanilla
2 eggs
3 cup flour
2 1/2 teaspoon baking powder
1/2 teaspoon salt

Directions: Beat sugar, vanilla, butter and eggs until it’s nice and fluffy.  Stir in flour, baking powder and salt.  Refrigerate for about 1 hour.  Roll and cut out the cookies. Bake at 400 degrees for 5-8 minutes.

Snow Top Cookies

Time: Make in 20 minutes, chill overnight and bake 10-12 minutes

Ingredients:

1/2 cup shortening
4 squares of chocolate
2 cups sugar
4 eggs
2 cups sifted flour
2 teaspoons baking powder
pinch salt
powdered sugar

Directions: Melt the shortening and chocolate.  Add sugar, eggs, flour, baking powder and salt.  For best results, chill overnight.  Preheat oven to 350.  Take dough out and shape into walnut size balls.  Roll in powered sugar, bake on ungreased cookie sheet at 350 for about 10-12 minutes.

Time: Thirty to forty minutes.

Ingredients:

3 cups Rice Krispies
1 cup dessicated coconut
3/4 cup powdered milk
1/2 cup powdered sugar
2 oz mixed candied fruit, chopped
2 oz red and green candied cherries, chopped
1/4 cup raisins
4.5 oz white vegetable shortening
4.5 oz white chocolate chips

Directions: Brush a 9″ x 13″ pan with oil and line base sides with paper. Combine Rice Krispies, coconut, powdered milk, powdered sugar, and all fruit in a large bowl. Chop up the shortening, place with the chocolate in the top of a double boiler and stir until mixture is melted and smooth. Combine chocolate and Rice Krispie mixture and press into the prepared pan.  Refrigerate until set, remove from the pan and allow it to stand for 10 minutes. Cut into squares with a sharp knife.
